A COMPARISON OF SELECTED MILK INDICATORS IN ORGANIC HERDS WITH CONVENTIONAL HERD AS REFERENCE Organic Eprints
Hanuš, O.; Vorlíček, Zdeněk; Sojková, K.; Rozsypal, Roman; Vyletělová, Marie; Roubal, P.; Genčurová, V.; Pozdíšek, J.; Landová, H..
In a historical sense, current organic farming is an old-new alternative under changed world conditions. Organic dairying (O) is an alternative of friendly use of the environment in time of presupposed global climate changes. Potential impact of organic farming on raw cow-milk quality, composition and properties, as conpared to conventional milk production (C), were evaluatedin this paper on the basis of selectedm ilk indicators (MIs). Total solids, whey volume, pH of milk fermentation ability (FAM-pH), FAM streptococci, FAM noble lactic acid bacteria, I and Cu were higher in C milk (P<0.05). The alcohol stability (AS), titration acidity, curd firmness (CF), FAM titration acidity (FAM-T), Ca, P, Mg, K and Fe were higher in O milk (P<0.05)....

Absence of both glutathione perioxidase activity and glutathione in bovine milk Organic Eprints
Stagsted, J..
Glutathione peroxidases are selenium-dependent, antioxidant enzymes that catalyse the removal of hydroperoxides using the tripeptide glutathione as reducing substrate. The presence and importance of glutathione peroxidase for the oxidative stability of bovine milk is unclear. We failed to detect any specific activity in bovine milk using careful and comprehensive assay conditions. The apparent activity in milk that has been ascribed previously to glutathione peroxidase was shown to be independent of added hydroperoxide, completely inhibited by >6 mM EDTA, and could not be immunoprecipitated with a specific antiserum against the extracellular form of glutathione peroxidase. These results are incompatible with activity of glutathione peroxidase in bovine...

Acrylamid-Bildungspotenzial ökologisch erzeugter Getreidearten und Sorten Organic Eprints
Stockmann, Falko; Mast, Benjamin; Graeff, Dr. Simone; Claupein, Prof. Dr. Wilhelm.
By heating up carbohydrate-rich food, like cereals and potatoes, Acrylamide (AA), a probably carcinogen food ingredient, will be created due to a reaction of free Asparagine (Asn) and reducing sugar within the Maillard-Reaction. Up to now two opportunities to decrease AA are discussed. Firstly by changing technological food processing steps e.g. receipt modifications and secondly by plant production e.g. finding species and cultivars low in the content of precursors of AA. For cereals, free Asn is the limiting factor for formation of AA. By investigations of conventionally produced wheat-, spelt- and rye samples differences were found in the amount of Asn both in species and cultivars. It was assumed that these differences could also be found in...

Advantages and pitfalls of different types of studies for investigations of the impact of food on health Organic Eprints
Brandt, Dr Kirsten; Seal, Dr Chris.
Several types of studies can be used to elucidate various aspects of the effect of food on human health. The main categories are: • Epidemiological (observational) studies with humans. These can be prospective, where the diet is recorded and health indicators are moni-tored after the first recording, or retrospective, where people who have a disease are identified and it is then investigated if their diet has been different from those who did not get the same disease. • Intervention studies with animals or humans, where the outcome is differences in indicators of health between groups eating different controlled diets. • In vitro studies, where specific aspects of the mechanisms of the effects of food or food com-ponents are studied in cell cultures,...

Altering the composition of ruminant-derived foods for improved human health Organic Eprints
Shingfield, Kevin J.; Viitala, Sirja; Leskinen, Heidi; Vilkki, Johanna.
Nutritional regulation of milk and meat fatty acid composition has been the subject of intense research during the last few decades. Considerable progress has been made towards understanding the role of diet on enhancing the nutritional value of ruminantderived foods while more recent studies have attempted to elucidate the molecular mechanisms underlying the changes in milk and tissue lipid fatty acid composition in ruminants. Diet is the major environmental factor influencing the CLA content of ruminant milk whilst the effects of genotype, stage of lactation and parity are relatively minor (Palmquist el al. 2005). Concentrations of CLA in ruminant meat are dependent on diet, gender, slaughter weight and breed with evidence of variable enrichment...

Alternativen zur betäubungslosen Ferkelkastration: Verbraucherakzeptanz Organic Eprints
Heid, Astrid; Hamm, Ulrich.
In organic farming there is an ongoing discussion on piglet castration without anaesthesia and possible alternatives to this practice due to animal welfare concerns. Consumer acceptance of alternatives to piglet castration without anaesthesia plays an important role in this discussion. This contribution examines organic consumers’ attitudes towards piglet castration without anaesthesia and the alternatives castration with anaesthesia and analgesia, immunocastration and fattening of entire males. Additionally, consumers’ willingness-to-pay for the alternatives is determined. The results show that animal welfare, food safety and health concerns influence consumers’ attitudes towards the alternatives. However, the individual perception of those aspects is...

Analysis of organic and conventional beetroot juice assortment in Warsaw shops and consumer sensory evaluation of selected products Organic Eprints
KAZIMIERCZAK, RENATA; JABŁOŃSKA , PAULINA; REMBIAŁKOWSKA, EWA.
Organic food is produced in accordance with strictly defined rules, established by the European Union legislation. Thanks to this is considered to be safer and healthier than produced conventionally. Many studies show that organic products, especially vegetables, fruits and preserves contained more dry matter, vitamin C, vitamin B group, total sugar, indispensable amino acids and mineral compounds. At the same time organic plant products usually have been in general better evaluated in terms of taste and smell than conventional food. The aim of this study was to analyze the assortment of beetroot juice from organic and conventional stores in Warsaw, Poland and consumer sensory evaluation of selected products. Analysis of the products was carried out in...

Anbau transgener Pflanzen – Räumliche Aspekte der Koexistenz Organic Eprints
Schlatter, Christian; Oehen, Bernadette.
Most of the farmers in Switzerland won’t apply GMO farming. Their organisations support a five-year ban for the marketing of transgenic plants. However, in Switzerland there is no political discussion on co-existence as in the European community and their member states. In this study, the spatial aspects of coexistence of transgenic, conventional and organic farming in Switzerland are investigated. It shows that there are only 28 communities of 2848 where all farmers are bound by different labels to produce GMO-free. Most of these communities are situated in high altitude regions. In contrast, in arable regions of Switzerland, few farmers produce organic crops. In most of the communities in Switzerland, the simultaneous production with and without...
